A new appointment with the Roots Laboratory by Italea Toscana arrives: on Friday 9 August 2024 at 7 pm we will discover the “Dish of the Roots” in Cetica, with a culinary experience with which to discover the traditions of the Casentino.

Italea Toscana and the Municipality of Castel San Niccolò (AR) invite you to Cetica to take part in a guided tasting that will take you on a journey to discover the authentic flavors of Casentino, intertwining them with the stories of the people who have lived and continue to inhabit this land.

During this sensory immersion, you will have the opportunity to taste traditional dishes prepared with fresh and genuine ingredients, coming directly from the lands of Casentino.
Each bite will be a journey through time, to rediscover recipes handed down from generation to generation, jealously guarded by local families.
You will discover how the history and culture of this land are reflected in its dishes, in a perfect combination of taste and tradition.

But this experience is much more than just a tasting: it is an opportunity to get to know the migration stories of those who have lived in these lands and how these movements have redefined the culinary heritage of the area.
Guided by experts, we will explore the deep link between food and identity, between memory and innovation.

The event will take place in a convivial and welcoming atmosphere, where roots tourists will be able to share their passion for food and culture with other enthusiasts, exchange opinions and create new bonds.

The Piatto delle radici di Cetica Laboratory will allow you to savor the true essence of Casentino, rediscovering the deep bond that unites man to the land and its history through food.
An exciting journey to discover genuine flavors, traditions handed down and life stories, which will leave you with an indelible memory of this magical land.

The tasting will then follow with the initiative “Charcoal burners, pinottolai and transhumant shepherds: Stories of migrants taken from the Casentino Memory Bank”.
